Where it is desirable to include more fat in the diet, butter may be prepared from raw nuts. The following are the most delicious: almonds, cashew nuts, peanuts, cocoanuts, and soybeans. Cellulose: Here we meet a very important element, the cellulose, or fodder. Some have urged that, since there is but little nourishment in vegetables, especially the leafy vegetables, we are not justified in spending time in eating them. This is where we need to go to the lower animals again to learn how and what to eat. All our domestic animals eat quantities of grass, hay, and fodder, but comparatively little cereal food. God has given to the animals their fodder, and to man He has given his in the form of lettuce, cabbage, spinach, turnip tops, etc. We should eat heartily of foods containing cellulose and more sparingly of proteins and carbohydrates, or fuel foods, such as cereals, nuts, etc.

If this course were followed, constipation and many other diseases would disappear. Vegetables and fruits are rich in vitamins and minerals. Such vegetables as can be eaten raw should be used in generous quantities twice each day at least. The cereals, or energy foods, may be taken in the morning, but the last meal of the day should be light to insure peaceful sleep. We are told that man is the only animal that has lost the instinct of feeding himself. In choosing their food animals are guided by instinct, but since God created man in His own image, with reasoning powers, he is supposed to be guided by knowledge.

Essential foods. A very enlightening statement on this subject is found on page 104 of the 1939 Government Year Book, which says: “The chief fault of many American diets is that they provide too little of the essential minerals and vitamins. The fault is due in large measure to the fact that refined foods are consumed in such amounts that the intake of mineral—and vitamin—rich natural foods is lower than it should be.” It is said that Americans spend five times as much for harmful articles of diet as for those foods which would preserve health. A reformation in dietetic habits is the only hope of our race. Without Forever Bee Pollen, plants, trees and flowers couldn’t exist; even we depend on it. Preparation of Food: Good food may be prepared in such a way that it is rendered a hindrance rather than a benefit to health. For instance, boiling vegetables and pouring the water from them into the sink, means that food which might have passed through the chemical changes in digestion and been made into good blood will, because of this mistake, make a poor quality of blood, and consequently diseased tissues and vital organs.
